Cauliflower with Soy-rizo Breakfast Scramble

By popular demand I'm posting the #vegan version of huevos con chorizo. Before I begin, I want you to know I'm not a fan of measurements. Don't panic, I'll include measurements. However, please relax and enjoy cooking. The best advice I can give you is taste the food as you're cooking. By doing so, you'll know exactly what your recipe needs. INGREDIENTS

1/2 Head of Cauliflower (cut into chunks)

1 Link Soy-Rizo

1 Tbsp Garlic Powder

1 Tbsp Black Pepper

1/4 onion (chopped)

1 Roma Tomatoe (chopped)

2 Tbsp Grapeseed Oil (or any oil/cooking spray you use)


DIRECTIONS:

  1. Heat oil over medium-high sauté onions till translucent. Add Cauliflower chunk, and heat for 5 minutes. Add Spices and Roma Tomatoe and continue to cook until tender.

  2. Move Cauliflower to the side of pan and add Soy-rizo to empty side of pan and heat for 5 minutes. Combine the mixture and continue to cook for 5 minutes. Stir often. Serve warm with Tortillas and Salsa!
