Easy Cauliflower Tacos

Yes, I love to cook, but I don't want to spend a lot of time in the kitchen. My recipes are simple and quick. Everything is made from scratch, however, I promise it won't take all day to make. This is not where you'll find a recipe requiring you to, "cook on low for 8 hours, stirring every 2 hours...". I applaud those cooks! However, I don't have time to dedicated all that time to one dish. Also, when I cook it's me who's taking the video. I've said this before, you won't get a professional video, but its good enough to understand. I cook 2 - 3 times a day, so I post a lot of my recipes on my Instagram's Story. That's where most of my videos come from. That being said,
here's a quick, easy, and delicious recipe I
cooked this afternoon.
Ingredients:
1/2 Cauliflower head - cut into big pieces
1/2 package of Soy-Rizo
**I'm often asked where I get Soy-rizo, it's in every Supermarket, just ask where they have it.
Garlic Powder, salt, and black pepper to your liking.
Corn Tortillas
Cooking Oil **I use grapeseed oil
Onions, Cilantro, Salsa, and Lemon for garnishment
Heat oil in a pan and brown cauliflower add garlic powder, salt, and black pepper and cook till soft. Move to the side and cover.
In another pan cook the soy-rizo, once done, push to the side and add a little oil and cook tortillas. The tortillas will get some of the flavor of the soy-rizo. Make sure to move the pan away from the fire on the side the soy-rizo is on, you don't want to burn it. You are only cooking the tortillas.
Assemble the tacos; put soy-rizo on top of a tortilla, then cauliflower and top with onions, fresh cilantro, and salsa/lemon and enjoy!!
